This recipe make 1 whole cake (4 layers; diameter 8 inches)

Ingredients :
– Dry –
All Purpose Flour 180 gr
Baking Powder 2 ts
Baking Soda 1 1/2 ts
Cinnamon 1 ts
– Wet –
Egg large 3
Granulated Sugar 100 gr
Brown Sugar 125 gr
Unsalted Butter 150 gr – melted
Vanilla Extract 1 ts

Grated Carrot 210 gr (without the juice)
Carrot Juice 2 Tb
Walnuts 1/3 cup – chopped
Apple Sauce 200 gr Click Here

Method :
* Preheat oven 350 F
1. Beat the egg until pale and creamy.
2. Add in the sugar, beat again.
3. Pour in the melted butter and vanilla, mix well.
4. Sifted in the dry ingredients, mix until incorporated.
5. Add in the carrot, carrot juice, walnuts, and apple sauce. Stir until incorporated.
6. Divide the batter into 2 prepared baking pans (greased and lined with parchment paper).
7. Bake for about 30 – 32 min or until toothpicks comes out clean.
8. Remove from the oven, let it cool completely.

  

Mascarpone Cheese Frosting :
Unsalted Butter 100 gr – softened
Mascarpone Cheese 150 gr
Confectioner Sugar 3/4 cup
Vanilla Extract 1 ts

Method :
1. Beat the butter until creamy and fluffy.
2. Beat in the cheese.
3. Gradually add the sugar, beat until combined.
4. Add in the vanilla, beat until smooth.

Assembly :
1. Divide both cake into 2 layers.
(so now we have 4 layers)
2. Place the first layer into cake stand, start spreading the frosting thinly.
3. Place the second layer on top, then spread the frosting. Do the same method for all the layers.
4. Cover the sides and the top thinly (crumbs coating), let it chill for at least 15 min or until the frosting is set.
5. Spread the remaining frosting all over the cake.
6. Using fork, make a vertical stripes pattern.
(you can decorate the top with a little bit cake crumbs like I did)
7. Serve
