This recipe make 6 pcs (sheet pan 12 x 16 inch)

Filling :
Banana Ripe – regular 2
Whole Milk 160 ml
Vanilla Extract 1 ts
Egg Yolks – large 2
Granulated Sugar 40 gr
Cornstarch 2 Tb
Unsalted Butter 60 gr

Method :
1. Mash the banana and finely strain it, set aside.
2. Pour the whole milk and vanilla into a pan and bring to a scalding point.
3. Meanwhile, whisk together the yolks, sugar, cornstarch until pale and fluffy.
4. Slowly pour the milk into the yolk mixture while whisking, then pour back into the saucepan.
5. Whisk constantly over medium heat until it thickens and becomes glossy.
6. Remove from the heat and strain the custard into a clean bowl and stir in the butter, cover with plastic wrap.
* make sure the wrap touch the surface of the custard.
7. Let it cool at room temperature then chill it for at least 2 hours.
8. Add in mashed banana into the custard. Stir until smooth and incorporated. Pour it into piping bag. Chill until it ready to use.

  

Sponge Cake
Egg Whites – large 4
Granulated Sugar 80 ml
Egg Yolks – large 4
Vanilla Extract 1 ts
All Purpose Flour 60 ml

Method :
* Preheat oven 400 F
* Baking pan lined with parchment paper

Method :
1. Beat egg white until soft peaks then add the sugar, whisk again until stiff peaks.
2. Add in vanilla extract and egg yolk one at a time, beat until combined.
3. Sifted in all purpose flour, fold it carefully until incorporated.
4. Spread into sheet prepared sheet pan, bake for about 10 – 12 minutes.
5.Carefully flip the cake and peel the parchment paper then let it cool on a wire rack.
6. After it cools down, cut it into 6 parts.
7. Set aside.

  

Assembly :
1. Place the sponge cake above plastic wrap.
2. Pipe the banana custard on the middle of the sponge cake, give a space around 1/2 inch on each side.
3. Start to roll it.
4. Wrap it firmly with plastic wrap, twist the left and right side.
5. Do the same method with remaining cake.
6. Let it chill overnight.
7. Open the plastic wrap and serve.
