This recipe make for 18 pcs (diameter 2 inches)

Coffee Extract :
Espresso (good quality) 3 Tb
Granulated Sugar 50 gr
Water 90 ml

Method :
1. Bring the water to a boil.
2. Pour it into a bowl with espresso and sugar in. Let sit for 30 min, strain and bring it back to a boil over medium heat until it thickened.
3. remove from the heat and let it cool.

Coffee Buttercream :
Granulated Sugar 120 gr
Water 2 Tb
Egg Yolks 2
Unsalted Butter – room temp. 200 gr

Method :
1. Cook sugar and water until the sugar has dissolved (225 F).
2. Meanwhile, beat egg yolk until pale and creamy then drizzle the sugar mixture slowly while beating.
3. Keep beating until it is slightly cool.
4. Gradually add in butter, beat until fluffy (10 min).
5. Add in the coffee extract, beat until combine. Set aside.

Chocolate Ganache :
Dark Chocolate 50 gr
Heavy Cream 60 ml

Method :
1. Melt together over double boiler (bain marie) or microwave.
2. Stir to combine, let it cool.


Ingredients :
– dry –
All Purpose Flour 225 gr
Cocoa Powder 80 gr
Baking Powder 1 ts
Baking Soda 1/2 ts
Salt 1/4 ts
– wet –
Granulated Sugar 120 gr
Egg large 1
Unsalted Butter – room temp. 170 gr
Milk Chocolate 90 ml
Strong Coffee 90 ml
Vanilla Extract 1 ts

Method :
* preheat oven 375 F
1. Mix together all the dry ingredients, set aside.
2. Mix together milk chocolate and coffee, set aside.
3. Beat the butter and sugar until light, creamy, and fluffy.
4. Add the egg and vanilla, beat again.
5. Turn the mixer speed on low, alternately add the dry ingredients and milk mixture. (dry-milk-dry-milk-dry).
6. Using piping bag or ice cream scoop, drop off the batter (2 inches) onto the prepard baking pan (lined with parchment paper).
7. Bake for about 9 – 10 min or until it springy to touch.
8. Let cool.

Assembly :
1. Place the buttercream and chocolate ganache into a piping bag.
2. Pipe the buttercream on the edge of the cookie.
3. Pipe the ganache in the middle.
4. Stack with other cookie so it become like a sandwich.
5. Serve.



*you can serve it at room temperature or cold
*serve with a cup of tea or coffee for a better taste
